Beth M. Griffin, wife, mother, and grandmother, died suddenly on Monday, May 8, 2017 at home in Hillsborough, NJ. Born in Edison, NJ, she resided in Hillsborough for over 40 years. She is survived by her five children, Donna Popik and her husband Jim of Hopewell, NJ, Sheila Powers and her husband Randy of Skaneateles, NY, Colleen Griffin and her partner Bob Stoop of South Plainfield, and Kevin Griffin and his wife Lynn of Fair Haven, NJ. She is also survived by 12 loving grandchildren, Kyler Griffin, Meghan Powers, Hannah Powers, Bryce Griffin, Tara Popik, Caitlin Griffin, Brendan Powers, Erin Popik, Riley Griffin, Caroline Griffin, Clare Griffin, and Kevin Griffin Jr.. Beth was predeceased by her loving parents, Daniel & Madge Gallagher and her loving husband Don Griffin. Beth graduated from Le Moyne College in Syracuse, NY with a degree in elementary education before moving back to New Jersey. She worked for years as a beloved school teacher. She will always be remembered by her students for her enthusiasm for life and love of learning. Beth was a member of the Metuchen Golf & Country club for 20 years where she formed many lifelong friendships and memories. She was a true friend to all who knew her and enjoyed many activities including golf and dancing but what she loved most was spending time with her family and attending the many activities of her 12 grandchildren.
